Face à crescente procura de produtos naturais e orgânicos por parte dos consumidores, a descoberta, desenvolvimento e marketing de produtos funcionais e outros relacionados são, nos últimos anos, um segmento com um rápido crescimento no mercado, no âmbito das indústrias alimentar, farmacêutica e cosmética.
Dentro dos alimentos funcionais, as bebidas funcionais têm grande relevância, por serem produtos de consumo rápido e fácil, de pegar e levar (grab-and-go), ao mesmo tempo que se caracterizam como excelente fonte de nutrientes e compostos bioativos.
O consumo de café é um hábito mundial, muito ligado a questões culturais e sociais, tendo associados alguns efeitos fisiológicos específicos. O consumo regular desta bebida torna-se uma fonte importante de nutrientes e fitoquímicos, considerando-a um produto de elevado interesse e amplamente estudado há vários anos, já com diversas evidências científicas acerca dos seus efeitos para a saúde, que suportam a alegação de propriedades funcionais do café.
In recent years, consumers' rising demand for natural and organic products has fueled the research and development of functional products within the food, pharmaceutical, and cosmetic industries, increasing the growth and the opportunities of the market. Among functional foods, beverages pose great relevance as products of fast and easy consumption (e.g., grab-and-go) and at the same time constitute an excellent source of nutrients and bioactive compounds. Coffee consumption is a worldwide habit, closely associated with cultural and social lifestyles and its specific physiological effects. The regular consumption of this beverage is an essential source of nutrients and phytochemicals and, therefore, has received a great deal of attention over the years. Researchers have collectively gathered a wealth of evidence of coffee health benefits, which support their claims of functional properties.
