Em Portugal, a vitivinicultura constitui-se como um setor de relevância económica, social e cultural inquestionável, afirmando-se como uma atividade em constante evolução, na qual a arquitetura contemporânea se pode afirmar como instrumento estratégico para a requalificação de infraestruturas produtivas, a salvaguarda e valorização da paisagem vitícola e a consolidação de práticas de enoturismo sustentável. Parte-se do pressuposto de que a disciplina da arquitetura não se limita a dar resposta a requisitos programáticos de carácter funcional e técnico inerentes à produção vitivinícola, podendo antes configurar-se como agente ativo na construção e afirmação da identidade territorial, na racionalização de recursos construtivos e energéticos e na promoção de experiências imersivas e qualificadas para os visitantes. A presente dissertação propõe-se investigar de forma crítica a inter-relação entre arquitetura, processos produtivos vitivinícolas e práticas de enoturismo, procurando aferir de que modo o espaço arquitetónico concebido pode influenciar a eficiência produtiva, a qualidade enológica, as condições de armazenamento e maturação, bem como a experiência do visitante em todas as fases do ciclo produtivo. Os resultados da investigação serão operacionalizados através do desenvolvimento de uma proposta de intervenção arquitetónica para uma unidade de vinificação de vinho verde, a localizar na Quinta de Agrelos, freguesia de Sande e S. Lourenço do Douro, concelho de Marco de Canaveses, dotada de programas complementares de enoturismo e hospitalidade. Esta proposta assume-se como caso de estudo aplicado, visando testar soluções projetuais que articulem a funcionalidade operacional, a integração morfológica e paisagística, a sustentabilidade ambiental e a qualificação da experiência enoturística, em alinhamento com os princípios de arquitetura bioclimática e os referenciais normativos da construção de baixo impacto. A reflexão crítica incide, ainda, sobre a dimensão da sustentabilidade, transversal a toda a investigação, atendendo aos desafios contemporâneos de mitigação dos impactos ecológicos da construção, da eficiência energética e da resiliência face às diretivas europeias para edifícios NZEB (Nearly Zero Energy Buildings). Em síntese, pretende-se contribuir para uma reflexão aprofundada sobre o papel da arquitetura na cadeia de valor vitivinícola e na dinamização do enoturismo, demonstrando de que forma o projeto arquitetónico, enquanto síntese entre forma, função e contexto, pode gerar valor económico, social, cultural e ambiental nos territórios de vocação vitivinícola.
In Portugal, viticulture is an unquestionable sector of economic, social, and cultural relevance. It is a constantly evolving activity in which contemporary architecture can emerge as a strategic tool for the requalification of production infrastructures, the preservation and enhancement of the wine landscape, and the consolidation of sustainable wine tourism practices. This dissertation is based on the premise that architecture, as a discipline, goes beyond merely responding to programmatic, functional, and technical requirements inherent to wine production. It can also act as an active agent in shaping and affirming territorial identity, rationalising construction and energy resources, and promoting immersive and meaningful experiences for visitors. The study critically explores the interrelation between architecture, wine production processes, and wine tourism practices, aiming to assess how architectural space can influence production efficiency, wine quality, storage and ageing conditions, as well as the visitor experience throughout all stages of the production cycle. These objectives are pursued through the development of an architectural intervention proposal for a Vinho Verde winemaking facility located at Quinta de Agrelos, in the parish of Sande e São Lourenço do Douro, municipality of Marco de Canaveses, which includes complementary programmes for wine tourism and hospitality. This proposal is conceived as an applied case study, seeking to test design solutions that articulate operational functionality, morphological and landscape integration, environmental sustainability, and the enhancement of the wine tourism experience - in alignment with bioclimatic architecture principles and low-impact building standards. The dissertation also addresses the dimension of sustainability, which underpins the entire investigation, considering contemporary challenges such as the mitigation of ecological impacts from construction, energy efficiency, and resilience in line with European directives for NZEB (Nearly Zero Energy Buildings). In summary, the work aims to contribute to a deeper reflection on the role of architecture in the wine value chain and in the development of wine tourism, demonstrating how architectural design - as a synthesis of form, function, and context - can generate economic, social, cultural, and environmental value in viticultural territories.
