O amaranto (Amaranthus L.) é um género de planta herbácea anual, pertencente à família Amaranthaceae, o qual compreende cerca de 70 espécies, das quais 40 são originárias do continente Americano. O cultivo desta planta está em franca ascensão mundial devido ao seu aporte nutricional e propriedades funcionais reconhecidas.
Neste trabalho pretendeu-se efetuar uma revisão exaustiva e completa sobre as propriedades nutricionais, composição química e propriedades biológicas desta planta, valorizando o seu potencial para integração na dieta alimentar. Para tal, foi efetuada uma revisão bibliográfica baseada em artigos científicos, realizada entre outubro de 2015 e maio de 2016, nas bases de dados de referência PubMed, Science Direct e b-On e em motores de busca, como: o Google Académico e AltaVista Search. As palavras-chave utilizadas incluiram: “Amaranth”; “Bioactive compounds”; “Biological activities”; “Nutritional composition”, “Phytochemicals”; Health benefits”. A pesquisa resultou em 540 artigos, tendo sido utilizados 70 artigos.
Devido às suas características nutricionais, este grão pode ser considerado como um alimento energeticamente equilibrado, reunindo propriedades funcionais para o metabolismo humano. Além disso, é um alimento rico em proteínas, mas isento de glúten podendo ser incorporado em géneros alimentícios para celíacos. O seu perfil rico em compostos não nutrientes também promove a sua ação preventiva no desenvolvimento de doenças crónicas não transmissíveis.
The amaranth (Amaranthus L.) is a genus of annual herbaceous plant belonging to the Amaranthaceae family, which comprises about 70 species, of which 40 are indigenous to the American continent. The cultivation of this plant is in full rise worldwide due to their nutritional intake and recognized functional properties. In this work a complete and exhaustive review of the nutritional properties, chemical and biological properties of this plant was done, in order to enhance its potential for integration in our diet. To this end, a literature review based on scientific articles was made, conducted between October 2015 and May 2016, by using some different databases like PubMed, Science Direct and b-On, and in the search engines, such as Google Scholar and AltaVista Search. The main keywords used included: "Amaranth"; "Bioactive Compounds"; "Biological Activities"; "Nutritional composition", "Phytochemicals"; Health benefits ". This research resulted in 540 articles, but only 70 articles were used. Due to their nutritional characteristics, these grains can be considered as balanced food energy, providing functional properties for human metabolism. Moreover, it is recognized for the high protein contents, but gluten-free, which may be incorporated into specific foods for celiacs. Also, Its high profile in non-nutrient compounds also promotes preventive action in the development of chronic non-communicable diseases.
